½ c. sugar
2/3 sq. butter
1 egg yolk
1 c. whipped cream
1 pkg. coconut
1 box (12 oz.) vanilla wafers
1 sm. Can crushed pineapple,drained
1 T. lemon ju.
½ c. chopped nuts
Cream together soft butter & sugar. Add egg yolk & blend well. Whip cream & add to sugar & butter mixture. Crush vanilla wafers into fine crumbs, using a rolling pin & plastic bag. Add wafer crumbs, pineapple, lemon ju., & chopped nuts to sugar, butter, cream mixture. Blend well. Form mixture into walnut size balls. Roll in coconut generously. Freeze until ready to use. Must be kept cold until served.
