CHICKEN FRIED STEAK

1 ½ lb. ground beef
1 egg, beaten
1 T. milk
¼ t. pepper
1 t. salt

1 c. crushed saltine crackers
1 T. oil
½ c. water
1 ½ c. milk
6 T. water

Form ground beef into patties. Mix egg and 1 T. milk in pie pan. Combine seasonings, 4 T. flour & crackers. Dip meat patties in egg-milk mixture, then in crushed cracker mixture. In a large skillet heat oil & cook on med-high for 5 min. on each side to brown. Add water & cover. Lower heat to med-low & cook slowly about 1 ½ hr. (Add more water as needed).

Remove meat to platter. Increase heat to med-high & stir with heavy spoon, scrapping the bottom of pan. Whisk in remaining flour until smooth. Slowly pour in milk, whisking until gravy is thick & smooth. Add more salt & pepper if needed. Strain to remove any lumps. Spoon over meat.
