5 cooked chicken breasts, cut in bite sized pieces
2 c. chopped celery
4 hard cooked eggs, chopped
1 ½ c. mayonnaise
1 T. lemon juice
2/3 c. slivered almonds
4 oz. mushrooms, drained (or fresh ones)
1 can (2 oz.) pimento, cut up
1 t. salt
1 t. grated onion
1 c. sharp cheddar cheese, grated
1 ½ c. crushed potato chips
Combine chicken, celery, lemon ju., almonds, eggs, mayonnaise, pimento, salt, mushrooms & onion. Pour into buttered shallow baking dish. Top with cheese, then chips. Bake at 400 for 25 min. Garnish with parsley or green onions.
