MEATLOAF & POTATOES

1 ½ lb. ground beef
¾ c. evaporated milk
½ c. oatmeal
12 oz. frozen hash brown potato cubes
¼ c. chopped onion
1 t. salt
¼ t. pepper
¼ c. ketchup

Place potatoes on bottom of 8 x 8 pan sprayed with pam. Mix rest of ingredients & spread on top of potatoes. Bake uncovered at 350 degrees for 45 min. Serve with ketchup.

*You can use 4 c. thinly sliced real potatoes instead of hash browns, just bake 75 min. instead.
