LEMON PIE

1 c. sugar
¼ c. cornstarch
½ t. salt

Mix together & add:

¼ c. cold water
1 T. lemon rind (optional)
¼ c. lemon ju.
3 egg yolks (save whites for top)

Mix & add 1 ¼ c. hot water. Cook on med. high heat to a full boil. When it thickens, add 2 T. butter. Cool in pie shell.

MERINGUE

3 egg whites (beaten stiff)

1/3 c. sugar

Mix together & put on pie. Put in oven under broiler. (Watch closely until it turns golden brown). Refrigerate.
