(can be made in bread machine)
1 T. yeast with 1 t. sugar
2 c. warm water
3 T. honey
¼ c. gluten or 100 mg. vit. C; smashed
1 ½ t. salt
5-6 c. whole wheat flour
Mix 3 c. flour with yeast & gluten. Add water & mix for 1 min. Cover & let rest for 10 min. (This makes the bread lighter). Add oil, honey & salt. Add remaining flour 1 c. at a time until dough forms a ball & cleans the sides of bowl. Knead 12 min. Dough should be smooth & elastic.
Preheat oven to 150 degrees. Lightly oil hands & shape dough into 2 loaves. Put in greased loaf pans. Place in warm oven & let rise about 15-20 min. When almost double in size turn oven to 350 degrees & bake about 25 min. or till golden brown. Turn out of pans on wire cooling rack immediately.
