½ c. sugar
1 egg
¼ c. salad oil
½ c. milk
2 t. baking powder
½ t. salt
1 ½ c. flour
1 c. blueberries
Heat oven to 400 degrees. Beat egg. Stir in milk & oil. Mix dry ingredients in a separate bowl. Pour in liquid & blueberries. GENTLY stir just until moistened. Batter should be lumpy. Fill paper lined (or greased) muffin tins 2/3 full. Bake 20 – 25 min. or until golden brown. Immediately remove from pan.
Yield: 1 dozen
